If you omit vanilla extract, you will not have the intended flavoring. If you don't like vanilla, try substituting maple syrup, exactly equal to the amount of extract the recipe states.
why would you want to do that! baking with vanilla makes everything taste better! you can omit it, but it wont taste the same
I'm assuming vainla excart is vanilla extract. since the vanilla extract is only a flavoring agent, You can safely omit it, however the cookies will taste different. You can substitute have another extract (like almond!), but I would probably only use half the amount called for in the recipe.

Vanilla flavoring is a common ingredient in many soft drinks, but I would be surprised if most of them used natural extracts. It would drive the cost up too high. I believe that some of the smaller specialty and natural manufacturers use natural ingredients and I would expect they may use real extract.
