The cholesterol either returns to your liver or if your liver is full, it is deposited in your arteries. If you have fiber in your digestive track, some cholesterol is eliminated with other waste. The cholesterol in your arteries can build up, close off the artery, and cause a heart attack.

However, in general people who eat a vegetarian diet containing a wide range of vegetables with occasional meat are the healthiest people.
