Almost all the vitamins, minerals and fiber in rice is in this outer covering - white rice is just the starch part of the rice. That's why brown is healthier. Try mixing half and half to get started switching over. Also put a little more water in brown rice and cook it longer to make it softer. It has much more flavor and once you make the switch you won't want to go back.
