really, you can put anything except for meat. It depends if you eat dairy or not. If you do eat dairy, you can put cheese, onions, tomato, lettuce, some coleslaw, or even different kinds of beans. you could MASH up chickpeas, mix them with some mayo, lemon juice, salt, and pepper. If you eat eggs, you could make an egg sandwich.
