According to USDA food composition tables, ground ginger has no vitamin C content. Raw fresh ginger has small amounts, but not as a significant food source. An average minimum target for vitamin C consumption/day is 75 mg.

Here are two estimates of vitamin C content in fresh ginger ranging from 5-11.5 mg/100 grams sliced ginger:

1. Most recently, 11.5 mg of Vitamin C was reported to be found in 100 grams (1 cup) of fresh ginger by food scientists M Ogunlesi et. al "Vitamin C Content of Tropical Vegetables and Foods.." in the Int. J. Electrochem. Sci., 5 (2010) 105 - 115.

2. United States Department of Agriculture (USDA) Vitamin C estimates for fresh ginger are 5-6 mg/100 grams fresh ginger.
