Because your body needs time to digest and if you exersize straight after eating then your food wont digest properly and will stay lurking in your body, unless you throw up. You could easily puke if your doing something like jumping after you eat, so its best to wait 45 minutes. Better safe than sorry!

When I exercise I usually wait up to an hour
To me, waiting half an hour or 20-30 minutes after eating is very recommended. This is because when we finish eating, our food is in our stomach getting digested. When we move a lot like run or jump, the consumed food bounce around, thus, resulting in vomiting, or a sick stomach.
Wait one hour for a good protective measure.
