To obtain seeds from dahlias, wait for the flowers to fade and form seed heads. Once the seed heads are dry, collect them and remove the seeds. Store the seeds in a cool, dry place until you are ready to plant them.
To collect seeds from gazania plants, allow the flower heads to dry on the plant. Once the seeds are fully matured, cut off the flower heads and shake the seeds out into a paper bag or container. Store the collected seeds in a cool, dry place until you are ready to plant them.
Sunflower seeds come in a variety of sizes, depending on the cultivar. Many varieties with larger seeds sizes suffer from weak and easily broken heads as it is. If they were any larger, the heads would break off and die before the seeds were fully developed.
Probably very few. Sunflower heads are processed at the factory producing the sunflower seeds by the thousands, and in washing, sorting, etc, a great deal of "mixing" takes place. A bag of sunflower seeds probably has seeds from dozens/hundreds of heads in it.
To harvest coneflower seeds effectively, wait until the flower heads have dried on the plant. Cut the flower heads off and place them in a paper bag. Shake the bag to release the seeds, then store them in a cool, dry place for future planting.
If their beaks are down in the seeds when they shake their heads, as I suspect you mean, they are trying to uncover their favorite seeds. House Sparrows, for example, are very fond of millet, so when they've eaten all the millet seeds they can see, they move the seeds around to find some more millet.
To collect thistle seeds, wait until the seed heads have turned brown and dried out on the plant. Cut the seed heads off the plant and place them in a paper bag. Shake the bag to release the seeds, then store them in a cool, dry place in an airtight container.
To save calendula seeds for future planting, wait for the flower heads to dry on the plant. Once dry, remove the seeds from the flower heads and store them in a cool, dry place in a paper envelope or container. Make sure the seeds are fully dry before storing to prevent mold.
