It would probably be reasonable to substitute grapefruit for the tangerines as they are close in ph. Ingredients for marmalade are: 10-12 medium tangerines, 7 cups sugar, 3 ounces of liquid pectin. The recipe for grapefruit curd requires: 1 cup sugar, 2 tablespoons cornstarch, 1 teaspoon grapefruit peel, 1/2 cup grapefruit juice, 1/4 cup water, 6 egg yolks, 1/2 cup butter.
