Traditionally, wassail is mulled beer or mead. Ingredients varied slightly, but the core ingredients were: beer or mead (fermented honey and water), cinnamon, nutmeg, ginger, sometimes sugar or honey, and it could be laced with sliced Oranges, lemons, apples, or other fruit. Toast was often floated on top as sops (meant to be eaten after it had soaked up some of the liquid).
Modern wassail is often made with wine and more accurately resembles Glühwein (German mulled wine traditionally served during the winter festivals).
