Anhydrous means "without water." Exactly what you mean by anhydrous compounds is not perfectly clear, because it might mean one of several things:

Anhydrous ether means ether which has been chemically dried so that it contains absolutely no water. This is done with other solvents as well, because certain chemical reactions can be messed up by even a trace of water.

There are also acid anhydrides, which are in a sense dehydrated acid; two carboxylic acid functional groups can react with each other in such a way as to eliminate a water molecule.

Finally, many inorganic salts crystallize along with water, and if this is driven off then the result is usually called anhydrous (whatever) to distinguish it from the usual form.
