The US-EPA has established 10 mg/L as the MCLG for nitrate in drinking water. Excessive nitrate is turned to nitrite in infant's blood, preventing them from getting enough oxygen. There is significant nitrate and nitrite in common foods as well. The European Food Safety Agency says: "An Acceptable Daily Intake (ADI) for nitrate of 3.7 mg/kg b.w./day, equivalent to 222 mg nitrate per day for a 60 kg adult was established by the former Scientific Committee on Food (SCF) and was reconfirmed by the Joint FAO/WHO Expert Committee on Food Additives (JECFA) in 2002. The CONTAM Panel noted that no new data were identified that would require a revision of the ADI."
