I'm not 100% sure, but I believe it's because a star is made of Plasma. Which is a partially ionized gas. The Plasma forms together through Nuclear Fusion and creates a giant luminous ball called a Star. A Gas Giant is a planet not entirely composed of rock or other solid matter. The outlayer of a Gas Giant is what we see from space, and it is composed of gas. Jupiter and Saturn's outlayer is composed of primarily Hydrogen and Helium. The closer you get to a Gas Giant's core, the more the gas starts to compress and turn into liquid and than a solid.
