I only have a rough idea why, its to do with the energy of the chemicals, if they can react so that the products of that reaction have less energy its very likely . In this case salt and water are produced, both are known to be very stable so therefore thye have less 'energy ' than the reactants. The field of chemical thermodynamics covers all this stuff.
