There are two reasons for this that I can think of off the top of my head.
First of all, it is not salt that conducts electricity but salt dissolved in water. As a solid, salt is an insulator.
Second, even if salt did conduct electricity, it would be very difficult to build durable, installable wires out of it. They would tend to break and be dangerous.
It is highly reactive. Because it is in the first chemical family, it only has 1 valence electron making it very unstable.

The wires can dig into and cut your gums. Also you usually cant chew gum and eat certain foods. You get used to them though.
sodium is used for cooking or sodium hycloptorite is used for killing bacteria and is found in bleach
Sodium carbonate is a compound. Until you react it with something, it cant have or be a chemical change.

Sodium reacts with water or air and will burn and explode. Hence sodium in not used in cookery.
