It depends, they both offer you valuable knowledge and develop your skills. If you are planing on working as soon as you get out of High School or to go to community college, and you don't really like thinking, then you will survive not having taken any AP or IB classes.
If you want to go to a good college (and not just harvard, I'm talking about any good college), then yes, take those classes.
AP Vs IB
What it says about you-
AP: I'm smart and care about the subject. I believe education is important and choose to make an effort to learn. In my exam I scored a (1-5), which means you might let my skip a year in that subject since I have shown I already know all that which you would have taught me.
IB: I'm quite smart and I don't recent all those nights I spent studying and writing essays and lab reports and reading and solving and...., because education is one of the most important in my life. As you can se from my grade of (1-7), you might consider me a direct decedent of Albert Einstein.

IB diploma: I'm very smart (or a fool, see grades for clarification) and have enrolled in the hardest, most demanding, most inhuman, most enslaving form of education known to man. I've survived, now, let me in through the doors of greatness to take my place among the future leaders of mankind.

You should take some culinary arts classes while in high school. You should also take all of your regular classes.
It doesn't really matter what classes you take in high school or even in college. The grades you get are more important.

Take any classes that revolve around or touch upon your interests. Also, look into an English course; "When your in high school" should be "When you're in high school" and "your not sure" should be "you're not sure."
It is a good idea to take communications classes in high school if you want to be a fashion editor. You should also take home economics classes as well.
