If I had to pick one that would be the quickest and easiest, I would assume general studies, since a general studies degree often offers more flexibility in course selection than a degree in a specific field. However, you need to be aware of what you want to get out of the degree, unless you just want to spend a lot of money for a piece of paper that says your name and bachelors on it.

I would have to agree with the answer above. But these days that is all that is required to get a good paying job is an expensive piece of paper with Bachelors degree and your name.
