This can depend on how fast you speak. If you speak really fast, then the three minute essay could be as much as six pages. If you speak really slow, then the essay could be as little as one page. However, what you want to go for for a three minute essay is at least four pages. To make sure this is a good amount for you, however, you need to recite the essay. This is absolutely important, im not saying this because im trying to be obnoxious and tell you what teachers want to tell you, this is exactly what you need to do. This allows you to make sure that you don't sound like an unprepared idiot and to make sure your essay is neither too long nor too short. If it is too short, add onto it, likewise if it is too long then subtract from it.

Something that is on the topic the course is about of course. But beyond that I would always pick one of two options: first option was to write about something I'm passionate about, something I really cared about. This would motivate me to do the paper and get it done. Second option was to write the essay about something I'm curious about, something I'd like to know more about. The curiousity was usually enough to push me on through to finish the paper even if at the end I didn't like the topic. It was a benefit in the long run cause I now knew I didn't want anything to do with that topic again. The thing is to get words on paper, specifically your words. The essay is just that, your words.
