The concrete noun sole is a physical thing, the bottom of a foot, the bottom of a shoe, and the bottom surface of many other physical objects.

The noun form for the verb to sole (the act of putting a sole on something) is the gerund soling, perhaps an abstract noun.

"Sole" meaning "only" is already an adjective. "Sole" meaning a type of fish might be described as hot, cold, cheap, expensive, wet, or any other adjective you could apply to a fish.
