Sofar in my own efforts to understand the concept, symbolic thought is the capacity to represent one thing with another and thus form a concept. Art is thought to be the earliest evidence of symbolic thought in man - in cave paintings images represent things other than themselves - typically animals. But there is a difference between iconic signs (images with a physical resemblance to the thing they represent - pictures) and symbolic signs (images with no relation to the things they represent - e.g. most words - Mathematical symbols). There is a related difference to concepts of physical objects (e.g. tree, rock, moon) and concepts of non-physical ideas (e.g. love, mother, kindness). I am not sure whether symbolic thought is that which occurs in the latter only. Piaget is the man to study,apparently. Great apes, Dolphins and Elephants recognise themselves in mirrors - they thereby demonstrate the ability to form a concept of their self. Human infants begin to recognise themselves in mirrors around 18 months.... Jacques Lacan has (complicated) things to say about this ability and its relationship to language.
