If it is a normal Helios' Ray the only way is to pay another pass or use another Helios' Ray to change it. But if it is an Unlimited Helios' Ray (which only come in the Harmony Pack, 3 passes) you go down your horse's page to 'Landscape', underneath the skills section, and select it.
