Saddlebred's are not shown in a halter. They are shown in the classic country pleasure double bridle.

On a halter for everyday use nylon is the best. Most of these halters run between $15-20. Plus another $10 for a lead rope. If your buying a leather halter or leather grooming halter this will probably be $50 and up. If a show halter is what your looking for you will be spending much more. The lower end show halters that have silver plate can be had for around $200. A nicer show halter with sterling silver start around $500 and go up from there.
Any English saddle is fine. Gymnkana's are usually for fun and games, you usually want to have a saddle you don't mind getting a bit scratched, so preferably don't use your show saddle! :)
I use my breast plate for looks in the show ring, but it can be used to help keep the saddle from sliding backwards when the horse is moving. I use it on my horse that has almost no withers to prevent the saddle from sliding too far to the side.
To lead a horse you would use a halter and lead rope. The lead rope attaches to the halter.
