You'll need 6 quarts, or 4 quarts if you're not dropping the pan and changing the filter.
You fill the fluid down the dipstick tube.
About 9 quarts dry fill.
Manual transmission is easy. There is a fill plug on the left axle flange and a drain plug on the bottom (special bit required). The automatic must be filled while running so it really isn't a DIY.

You need a scan tool to check the automatic transmission fluid on this car. The scan tool is needed to know the temperature of the fluid which must be close to 40 degrees celsius. At that point you remove the fill plug in the bottom of the transmission pan and fill with fluid until fluid drains back out. Use only genuine VW fluid part number G 052162A2 or you will damage the transmission. If you fill with fluid while tranny is to cool you will over fill and damage the transmission. If you fill with fluid when the tranny is to hot you will underfill and run a slight risk of damaging the transmission. The fill plug and drain plug are next to each other so make sure you are removing the right one.
Service fill is about 5 quarts. Dry fill is about 9 quarts.
there is no dipstick to check the fluid, the fluid is lifetime and never needs to be changed or serviced, there is a fill plug on the bottom of the transmission, engine running, and trans warm, fluid should pour slightly out of fill plug..
If I am not mistaken a manual or 5 speed transmission doesn't have transmission fluid.
