Depends on the model. Very difficult on a Mk 1 and Mk 2 as the clutch is cable operated and, therefore, no hydraulics. The only reservoirs are for brake fluid and power steering fluid. I suspect that it is the same for the Mk 3. If it is a later model then it may be hydraulic but I haven't investigated those yet.

To find the sensor you need to get a special tool, ...a long handled 5km headed hammer. Then you need to swing it at the frount of the car, and as you go check to see if you can find the sensor. This wont do much damage to the car, a blind man would be glad to see it.
