Both are exclusive relationships, as in you're not going to going out with anyone else, it's just the two of you. But a fiancée is the woman that you are engaged to be married to. A girlfriend is someone that you might eventually ask to marry you. But for now, you two are just dating. For engaged couples, the man is the fiancé and the woman is the fiancée. (two e's) They are often pronounced the same (fee-AHN-say), except that the female version is sometimes pronounced with the third syllable stressed (fee-ahn-SAY).
