It depends on whether you're thinking from the musical or a movie that would be closer to the book. In the musical, Cosette is a soprano and Eponine is either a mezzo or an alto. Both are good parts. If you're following closer to the book, then Cosette is a better part because she gets more time. However, Eponine also has very complex emotions so it's good to play her too. It all depends on your acting and/or singing.
