Depending on how large of a section has been bitten off, the fish in question should be removed and put in a more shallow tank by itself for the tail to grow back, for the most part once a fish is injured the other fish will not leave it alone, also the risk of infection is quite high which will not do the injured fish any good, live plants will provide a safe haven if the injured fish is too survive in the existing tank provided the tank has been running a while. If your guppy is in with just guppies, and you have live plants also in your tank the chances of the tail growing back are very good. If your guppy is in a community tank even with plants your success rate is not good. "Big Fish Eat Little Fish"

Honestly if you think you have been bitten by a spider on your back then you need to see a doctor i have seen spider bites turn extremley bad it was on your back so you have no idea what kind of spider it could be deadly or poisonous. You may not even feel the symptoms yet. For your own safety i recommend you see a doctor as soon as possible.
