Here's a translation of a recipe I found. Haven't tried it yet. It seems like it would make a huge quantity.
Tejuino a la Jalisco
Ingredients:
1 kilogram of masa (available at many grocery stores)
1 kilo of piloncillo (you can substitute dark brown sugar)
3 liters of water
2 limes
salt as you like
the juice of one lime
shaved ice as you like
Preparation:
1.- Boil the water and sugar together until the sugar is dissolved.
2.- Blend the masa in a blender with a little water, then add to the water and sugar mixture.
3.- This forms a gruel. Allow this to cool, then squeeze the two limes and add the juice the mixture.
4.- Leave it to sit 2 or 3 days until it is fermented, preferably in a clay pot covered with a clean cloth.
5.- Result: a thick porridge of its typical color. Serve with shaved ice and as much lime juice and salt as you like, pouring it from one cup to another to mix it and allow it to come into contact with oxygen.

The version I saw made was from Tucson Arizona and was made in a crock. The main ingredient was pineapple including the rind and water, sugar, and dry yeast. Let it ferment covered and then refrigerate. Drink it cold and be ready for a nap afterwards. The alcohol content probably varies but is like a strong wine. It is delicious and considered a summer treat.
