What my mom, who is from Virginia, does is to: peel and cut up potatoes into (round) slices about a quarter of an inch wide. Put the potatoes into a bowl or container filled with cold water to keep them from turning brown while peeling your onions. Peel and slice one medium sized onion in half, and then lengthwise, and place on side until ready to put into pan. Use a frying pan or skillet. Coat pan in vegatable oil or olive oil (olive oil is healthier, but does not have that down home taste). Add one tablespoon of oilas needed, and heat pan. Take potatoes out of water, dab quickly with a paper towel, and place in pan with onions, when pan is hot. Stir onions and potatoes and let cook until mixture is tender, and potatoes are fully cooked. (I like to cook then a little longer until brown around the edges.) Add a dash of salt and pepper, and mix your home fries. When we have home fries with breakfast the way folks do down south, add: (turkey) sausage or bacon; fried apples (with or without peeling) cut the same way as the potatoes, placed in a pan with a pat of unsalted or unsalted sweet butter, and cooked into soft. Some people add a little sugar to the mixture, but I already feel guilty because of the butter. Finish you meal with coffee and toast. Instead of putting butter on your toast, place some of the fried apples on your toast. While we didn't go overboard, I suggest that this kind of breakfast only be served during special breakfasts like on holidays, or one could wind up being three or four hundred pounds. Enjoy.
