First, for the purposes of this question, I am narrowing the analysis to Jews who keep kosher, e.g. follow the dietary laws, and also ignoring any personal Allergies.

While Jews can eat sushi, they can only eat vegetarian sushi or sushi from kosher sea creatures, like tuna, salmon, yellowtail, butterfish, mackerel, spanish mackerel, etc. All non-fish (crabs, shrimp, prawns, etc.) are not kosher and prohibited. Additionally, if there is any meat elsewhere in the meal, the sushi cannot be prepared with any dairy, and must be prepared koshered utensils (utensils that have been properly washed and/or have never had contacted with dairy). Conversely, if the sushi has dairy in it (Philadelphia rolls), meat must be wholly excised from the meal, but fish does not count as meat.
