Since I eat a lot of pickled things. I was also interested in this. While the answers aren't so clear cut, there does seem to be a correlations according to studies. Whether it is the high salt content of the pickles or compounds (such as nitrites or nitrates) produced in the pickling process isn't clear. Stomach cancer is the leading cause of deaths in Koreans who eat fermented foods on a daily basis.
