Yes, you can use mayonnaise instead of vegetable oil in cake recipes. Mayonnaise adds moisture and fat, which can enhance the cake's texture and flavor. Use an equal amount of mayonnaise as you would oil, but be aware that it may slightly alter the taste, making it richer. This substitution works best in recipes where the flavor of mayonnaise won't be too pronounced.
Omit eggs and oil and use ONLY the same amount of Mayonnaise as oil called for in the cake mix directions.

You can use shortening, butter or margarine, or even mayonnaise or lard in some recipes. Actually, many chocolate cake recipes call for mayonnaise instead of oil or butter. Just keep in mind that margarine has a higher water content than butter, so you may want to use all butter or half butter/half margarine if that's the substitution you choose.

I always use mayonnaise in my cakes instead of vegetable oil. Even with a box cake! It comes out so moist and yummy. By any flavor box cake, pour the dry ingredients in to the bowl, then add 3 eggs, 1 cup of mayo and 1 cup of water. Blend till moist and smooth and bake according to pkg directions. It will turn out wonderful!
