With that being said, this is how I would do it. If you want zucchini to taste like apple pie use all the ingredients you normally use for apple pie, substituting zucchini for apples. Zucchini has a lot of water, so I think I would slice, chop it and put on paper towels to remove some of the moisture. I even think you could mix zucchini and apples.

My kids hate veggies, so I very finely grate carrot and zucchini and add to the sauce in spaghetti bolognese, in taco mince, lasagne, casseroles etc. Alternatively you can cook, carrots, zucchini, mushrooms, pumpkin - whatever you like and puree it and add it to anything saucy or casseroles. They have no idea it's there because they can't see it. The reality is that vegetables are nice - it's the look that kids don't like, therefore they make themselves not like the taste! Goodluck!
