Set up a pan with vegetable oil (olive oil), or if you prefer it, butter.
IMPORTANT: Don't use too much oil or butter, mushrooms absorb fat very quickly.
Put the pan on the stove, let it become hot. Test the heat with a wooden spoon, when there are bubbles at the end of the spoon (the one end sticking in the hot oil/butter), it is ready.
Pour the mushrooms in the pan, move the mushrooms with the wooden spoon a little, but no longer than around 5 minutes.
Voila, done. Perfectly sautered mushrooms.

Mushrooms come in many different types, but nearly all of them are best in my opinion fried well done (until brown) in butter (or vegetable oil) with black pepper sprinkled on. This way you get the distinct flavour of the mushroom blended with a very tasty buttery flavour and a little bite from the pepper. My favourite type of mushroom is the Chanterelle, a light apricot brown coloured mushroom with a delicious slightly nutty flavour. If you add the fried mushrooms to some fried chopped celery with pork chops or bacon in particular, they combine very well. If you can't or won't eat pork products, mushrooms combine very well with chicken, fried onions and turmeric rice. If you prefer vegetarian food, fry the mushrooms with onions and tomatoes and a little chilli. This goes well with brown rice and cooked lentils to make a nutritious meal with all the proteins needed for a healthy diet.
