Make a drying rack with 4 2x4's and screen. You can cover the top with mesh fabric, but it is best to make the bottom with a heavy metal screen. Drop corn, on the cob, into boiling water. Boil for about 10 minutes. Scrape the corn off of the cob with a spoon or, if you are lazy like me, cut it off the cob with a very sharp knife. Make sure to leave as much of the kernel whole as possible. Lay corn on screen in a very thin layer and place in a location that will have sun for the entire day. Cover with mesh or another screen and use something heavy to keep the top down. It is best to dry late in the fall when the temps are hot and the humidity is low. Turn corn once or twice throughout the day to ensure even drying. Bring corn in in the evening before the temperature drops below 65 degrees. Return to the drying rack after any dew has dried in the morning. Continue this until the corn is dry. Can be dry in as little as 2 days, but if you are making it for shelf storage, I let it dry for at least 4.
