Use a large pair of scissors. One person holds the hen's wing out and the other cuts the long flight feathers off where they are overlapped by the next layer of feathers. Normally you trim both wings but sometimes if a chook has a history of escaping try trimming only one wing and it will be more difficult for it to fly straight.
