The longer you boil a vegetable, the LESS Vitamins it contains. So, to get the MOST vitamins from any vegetable, you should:

  • peel and eat raw when possible; carrot sticks make a nice snack
  • use less water and shorter boil time
  • stop boiling when the veg is still a bit undone, chewy
  • if you must "boil till soft" to your liking, plan to use the cooking water in a soup or stew so you get some of the vitamins that got boiled out of the veg
