Haupia (hi-a-wop-ia) is a Hawiian recipe. (Pudding like.)You will need: 5 tablespoons of ground arrowroot (found in the spice section of your supermarket), or 6 tablespoons of cornstarch, 6 tablespoons of sugar, 3 cups canned coconut milk, and 2 tablespoons of vanilla extract.Instructions1. Mix arrowroot or cornstarch and sugar in saucepan2. Slowly add coconut milk and vanilla extract. Heat on medium until mixture is bubbling slightly. 3. Stir constantly (to avoid lumps) until it thickens.4. Pour into an 8-inch square cake pan and chill until set, for about four hours. 5. When you're ready to serve it, slice the haupia into 2-inch squares.Serves 6-9 people.
Ingredients1 cn (1 lb) pumpkin2 Eggs slightly beaten3/4 c Sugar1/2 ts Salt1 t Ground cinnamon1/2 ts Ground ginger1/4 ts Ground cloves1 cn (13 oz) evaporated milk1 1/2 c Shredded coconut1 9-inch unbaked pie shell1 pk Haupia pudding mix(2 1/2 oz) 1 c Heavy creamwhipped and sweetenedPreheat electric oven to 425. In a large bowl, combine pumpkin and eggs. Add sugar, salt, and spices. Stir in milk and 1 cup of the coconut. Pour into pie shell. Bake for 15 minutes; lower heat to 350 and bake about 40 to 45 more minutes or until filling is set. Cool. Prepare haupia pudding mix according to package directions. Cool slightly, then pour over pie. Chill until haupia is firm. Just before serving, spread whipped cream over pie. Sprinkle with the remaining 1/2 cup coconut. Makes 8 servings.
