The potato was very important during the eighteenth century. During a time where diets lacked vitamins A and C, the potato made up for those nutrients. The potato contained a good supply of carbohydrates and calories, much more than grain did. Even though potatoes were first considered a famine food because people did not like them, once acknowledged as an important dietary supplement, they became the primary food in much of Europe.
