I just sampled some leftovers of Waldorf salad which I'd had in the fridge for three days. It tastes OK, and I'm pretty sure it has not gone bad and won't make me ill, but it did leave a slight aftertaste/undertaste in my mouth. To be fair, I was drinking beer before I sampled it, so it might be due to that (weird mix of flavors).
I definitely would not keep it longer than a week, though, and if it tasted like it had gone "off" I'd throw it out. It's made of tough stuff -- apples, raisins, walnuts -- so I think the apples (having been cut) and the mayo are the real things to watch for "turning". The apples still look primarily white, probably due to the lemon juice in the dressing, and they taste OK. The texture is still good on all components. Mine does not have celery, for the record, just apples, raisins, walnuts and dressing.
