First I'd check the expiration date, if it's before that I wouldn't worry to much about it. If you can't find it or it is after the date just look at the apple sauce. If it's the normal color, it's fine. But, if it has any forms of green or old color brown on the apple sauce or around it don't eat it. The green and brown is mold and won't agree with your stomach later. Also the smell of it can be a sign. As with most foods, if it doesn't smell normal don't be eating it.

Several factors affect how long it takes apple sauce to mold. The more sugar it has, the longer it will take. Also, apple sauce that is kept at room temperature will mold much more quickly than apple sauce that is kept in the refrigerator. Generally speaking, apple sauce will get mold on it after one to two weeks.

Actually, that is what you should use. The brown coloring in Apple Butter does not come from ground cinnamon. It comes from cooking the apple sauce for many, many hours. My family has been making Apple Butter in a copper kettle over an open fire for many decades.
