The length of time it takes to cool a freshly-baked pie depends on the size of the pie and the temperature of the kitchen, or the room where you're cooling the pie.

Cooling a pie in the refrigerator might be necessary if the day is hot and humid, but otherwise put the pie, in its dish, on a cake-rack placed over the sink. This allows good airflow and kitchen sinks are normally placed near windows. Open the windows in your kitchen and, if you don't have insect screens, put a net dome over the pie.

Depending on the type of pie you might need to remove it from the dish when it's cooled slightly, and return it to the rack until it's reached the desired temperature.

If you simply want to cool the pie to a temperature comfortable for eating you might need to leave it for ten or twenty minutes. If you want it fully cold, refrigerate it as soon as it's no longer hot to the touch; it might need fifteen minutes to half an hour to become cold.
