A smoked ham hock should keep refrigerated for up to a week, though I have had some become moldy before that. I try to use mine within a couple days of purchase.

I don't know about the skin... I believe it will, but you'll have a devil of a time making them keep without the sheer amount of salt dehydrating you poor pooch. If you do make treats for your dog using the skin of ham hock with the huge amount of salt if you want it to keep for more than a week, have him/her drink lots of water.
