When you pour the batter into the tin, level off the surface with a knife or spoon, then make a small well in the middle, slightly lower than the rest of the batter (this offsets some of the rising too much in the middle).

I think also using a lower oven temperature (10 degrees Celsius cooler than recommended) causes cakes to rise more evenly.
