If the egg floats on the water it is fresh , while if it sinks down it is a spoilt (old) one.

Most rural farms with a sign "fresh eggs" will be selling fertilized eggs. Small farms almost always keep a rooster in the flock. You can check with any local feed & grain distributor and they will know who in the area sells fresh eggs.
Hard to tell if you do not collect daily. Any suspect eggs should be given the "float" test. Floating eggs are bad/stale/unusable. If the eggs are for your own use just crack them in a bowl first and check that they are good.
