Edited Answer: Yes, potatoes are considered multicellular organisms, because they are able to produce their own food from inorganic matter (photosynthesis). They can get carbohydrates from carbon dioxide, water, and inorganic salts, as well as using sunlight to provide energy through Chlorophyll. This is why when you store potatoes in your home, they should be away from sunlight, as the tuber (actual potato) can use the sunlight to begin to sprout (draining moisture from the potato) and the sunlight can cause Chlorophyll to develop just under the skin. Chlorophyll can be deadly, however small amounts will not cause illness (such as on some potato chips, the thin, green edge some have). So, if your potatoes have been exposed to sunlight, prior to cooking, you should trim away any green areas. If the green/Chlorophyll is relatively deep into the potato, it is safer to discard that potato.
