Firstly - almost all vegetable and fruit are good for dieting if eaten in moderation and not overcooked or cooked & served with too much fat (ie. oil, butter etc). Cauliflower is said to be an easily digested vegetable. It contains good levels of Vitamin C and B, as well as Folic Acid and Potassium. It is a reasonable source of fibre, and if eaten raw or steamed, like most vegetables, it is as good as 'fat-free'. Also - as with any fruit and veg - it's best eaten in moderation with other fruit and veg.

Cauliflower is best eaten cooked, and cooks quite quickly. When cooking - you can treat it like most other white vegetables. Cooking will lose some of it's nutritional value, but no more or less than when cooking other vegetables.
