I don't know if it is officially considered an extreme sport, but each event would appear to bring about injury, if not death. I don't know what the parameters are for something to be classified as an extreme sport but, if lack of safety equipment, insanity of participants and quantity of injuries are a guide, then it's definitely up there!
It is an annual custom where a large round Double Gloucester cheese is set off rolling down a very steep hill at Cooper's Hill, near Brockworth (Gloucestershire) England.
Cheese chasing (or cheese rolling) is a British event where people tumble down a hill in pursuit of a wheel of cheese. The first one across the finish line gets to keep the cheese. You can see this "sport" on youtube. Caber tossing is a Scottish sport where people compete to see who can throw a VERY large pole the farthest.

Every spring in the Cotswolds in the UK there is a cheese rolling festival where they celebrate the new cheese. They roll the cheese down the side of a hill, whilst competitors chase after it. See the Related Link for more info.
it has to be out of the ordinary, an extreme sport can be anything that can put your own life at risk such as mountain biking or paintball, what makes an extreme sport is the intensity that you feel while engaging in the activity. Alpine skiing is another extreme sport.
