Left alone at a dry place, it would eventually dry out.

Left in a damp place it may get infected by mold and decompose.

Many physical changes occur, depending on what you do to it, or what conditions it is stored under.

I prefer my potatoes baked, boiled or mashed.

Then the potato is ultimately digested.

On the not so light side:

Did you know that potatoes are actually poisonous.

They contain a poison known as Solanin.

When a potato is left in daylight over a period, it will start to produce more "poison" and turn green. It is very toxic even in small quantities. Solanine has fungicidal and pesticidal properties, and it is one of the plant's natural defenses.

Many things you can do to a potato. Just do not eat it raw, and stay away from green ones.
