Lemon juice and rind, liqueur wine, quinces and sugar are the traditional ingredients in Albania's quince compote.
Specifically, the quinces are washed, dried and cored. Each quince needs to be cut into sixteen (16) slices. The slices are dropped into boiling water to which lemon juice already has been added. Sugar follows. The entire mixture simmers for half an hour. At the end of the cooking time, a fork easily should pierce the surface of each quince slice.
The dessert is served cold after being topped by ground lemon rind and liqueur wine.
