To make unfertelized eggs the chickens are kept separate from the rooster because they don't need to have intercourse to produce eggs. The same applies to humans, women don't need to participate in intercourse to have a period. (P.S. humans release eggs too)

much like periods in women, hens lay unfertilized eggs because they are always producing egg shells (made of keratin and protein). when not fertilized they hen must get rid of it by laying an egg. most egg farms will only have hens to produce edible eggs which must be unfertilized in order to be told to the food market.

In poultry eggs, there is no difference to what an egg is called, whether it is fertilized or non-fertilized; it's still an egg, and there is no difference in taste or quality between the two.

Hens regularly produce unfertilized eggs. The only time that they would be fertilized is if a rooster were present.

Is the egg white made out of sperm?

No it isn't. Eggs sold as food in grocery stores or supermarkets are not fertilized, they have received no sperm. The egg is produced entirely by the hen, with no contribution from the rooster. Even if the egg has been fertilized, the sperm is microscopic, and it only contributes to the genetics of the resulting embryo, not to the egg white.
